Tenuta Carbonara is a farmhouse that lays on a land as wide as 50 ha, up on the Hyblean mountains, just at the border between Ragusa, Modica and Rosolini. Our wheat is partially transformed into flour, to produce our own bread, home made pasta and focacce, and partially sold to the local pasta industries. Our fields, ofcourse, do produce also a very good pasture that is destinated to feed our own caws. The fresh grass of our grazing-lands provides our caws with the best, healthier and flavoured food for them to make the renowned and tasteful Ragusa milk. Not only this milk is very good as such, but it is the basis for producing the famous Ragusa cheese Ragusano DOP, ricotta cheese and Cosacavaddu ragusano. We also grow carob trees whose carobs are the base for several typical Sicilian recepies of Arabic origin, olive trees that give us a terrific extravirgin olive oil and fresh olives that we use in aur antipasto in the menus of our restaurant (ristorante a Ragusa). Finally lots of almond trees grow on our green fields, bringing delicious almonds that we use to make almond biscuits (biscotti di mandorla), torrone di mandorle, torrone di giurgiulena and almond milk (latte di mandorla).
Dulcis in fundo, we also grow pear trees that give us their delicious fruits in summer. We use them to produce a very good jam or very tasteful pear pies, or use them as such along with the delicious Ragusa cheeses. |

All our products are used not only as ingredients for the recepies of our restaurant, but also to be sold to our customers. Our farm is certified as ORGANIC by QCERTIFICAZION. |
